
We hope to bring MIRACLE MEAT to dinner tables around the world in the form of a delicious key ingredient with which to create a variety of packaged foods, such as hamburgers, chicken nuggets, gyoza dumplings, spring rolls and more. Over the years, we’ve poured our efforts into perfecting the umami balance in soybeans by experimenting with the varieties of soybean and with different environmental factors for germination. We believe the voluminous data from our research will help us further our endeavor to develop our “delicious plant-based meat” with realistic flavors mimicking those of chicken, pork and beef.
Why is DAIZ plant-based meat so delicious?
Made from living soy, not from dry grains
At DAIZ, we don’t use dry “grain” soybeans to make our plant-based meat. Instead, we use “living” sprouted soybeans harvested right after germination. This is why our product is rich in amino acids, vitamins and minerals – the compounds that are notoriously lacking in the conventional soy base for meat alternatives, which are made from pressed oil meal.

Full of umami
DAIZ’s plant-based meat, MIRACLE MEAT, is packed with umami! Data shows the sprouted soybeans germinated with the use of the Ochiai high Germination Method contain a higher amount of amino acids – the “umami” compounds – than beef does.

No bean-like flavors!
DAIZ use non-GMO high oleic soybeans, originally developed by Saga University. Abundant in olive oil, oleic acid – or, monounsaturated fatty acid – is linked to many health benefits, including lowering bad cholesterol and preventing cardiovascular diseases. The high oleic content of our soybeans also makes go away the distinct smell of beans that U.S. and European consumers generally dislike.
Oleic acid is what makes olive oil good for you. Oleic acid – which is a monounsaturated fatty acid – is known to help lower bad cholesterol and prevent cardiovascular diseases.
Nearly identical to the flavor composition of beef!
DAIZ’s Ochiai style sprouted soybeans are indistinguishable from beef in taste. That’s because both are very similar in balance of five fatty acids that create the flavors: Alpha-linolenic acid, linoleic acid, oleic acid, stearic acid, and palmitic acid.

Realistic meat texture!
Protein makes up 18% of Ochiai-style sprouted soybeans, compared to 16% of chicken. We knead these sprouted soybeans by using a special machine to apply high pressure to create the “muscle fibers” of poultry and meat. Therefore, MIRACLE MEAT can provide well-balanced nutrition as is, without any additives – a contrast to conventional soy-based meat made by adding oil and cellulose to pressed oil cake to granular soy protein to create meat-like textures.


Using AI in nutritional science!
DAIZ has established an information hub in the Cambridge district of Boston, Massachusetts, USA.
The Cambridge area is a cluster of knowledge, home to the Massachusetts Institute of Technology (MIT) and Harvard University.
In partnership with an AI researcher from MIT, we will use the Ochiai germination method to fully utilize the vast amount of functional information obtained from hundreds of grains to develop the best plant-based meat.
