
DAIZ hopes to spread the developed plant-based meat (MIRACLE MEAT) around the world as a tasty base material not only for hamburgers and chicken nuggets, but also for a variety of processed foods such as gyoza, dumplings, and spring rolls.
We have continued our research on changing the balance of umami ingredients by varying soybean varieties and germination conditions. Using this vast database, we will strive to develop "delicious plant-based meat" by deriving combinations that taste exactly like chicken, pork and beef.
Why is DAIZ plant-based meat so delicious?
Made from living plants, not grains
The raw material for DAIZ plant-based meat is not "grain soybeans", but "soybeans at the moment they sprout and become plants". The amino acids, vitamins and minerals increase rapidly. Until now, conventional granular soy protein was made from pressed oil meal, and lack of amino acids, vitamins, and minerals was an issue.

Full of umami ingredients!
DAIZ plant-based meat (MIRACLE MEAT) is full of umami! Comparing the free amino acids of beef and sprouted soybeans, the amino acids related to umami taste (due to the use of the Ochiai germination method), sprouted soybeans have a higher umami taste component than beef.

Zero off-flavors!
DAIZ uses high oleic acid soybeans that Saga University has successfully developed. It does not produce soybean-specific OFF flavor components that are not preferred in the West. We breed high oleic acid soybeans from non-genetically modified soybeans. Oleic acid is the main component of olive oil. Oleic acid is the reason why olive oil is good for the body. Oleic acid is a monounsaturated fatty acid and is expected to be effective in lowering bad cholesterol levels in the blood and preventing cardiovascular diseases.
The balance of the five fatty acids (Alpha-linolenic acid, linoleic acid, oleic acid, stearic acid, and palmitic acid) in DAIZ's Ochiai style sprouted soybeans is very similar to the fatty acid balance of meat. Therefore, you won't be able to tell it's soybeans unless you're told.
The composition of the rich flavors is very similar to meat!

The texture is just like meat!
Meat has 16% protein, while Ochiai style sprouted soybeans have 18%. Ordinary granular soy protein is made by adding oil and cellulose to pressed oil cake to resemble the texture of meat, but DAIZ's plant-based meat (MIRACLE MEAT) is made from Ochiai style sprouted soybeans, so it has a good nutritional balance without adding anything else. Using a special machine, germinated soybeans are kneaded under high pressure to reproduce the muscle fibers of meat.


Using AI in nutritional science!
DAIZ has established an information hub in the Cambridge district of Boston, Massachusetts, USA.
The Cambridge area is a cluster of knowledge, home to the Massachusetts Institute of Technology (MIT) and Harvard University.
In partnership with an AI researcher from MIT, we will use the Ochiai germination method to fully utilize the vast amount of functional information obtained from hundreds of grains to develop the best plant-based meat.
